Salary: £10.50 - £12.25 per hour (equating to £21,840 to £25,480)
Gratuities: £130 - £230 per month
Accommodation: subsidised accommodation available on site or in local town
Staff transport: provided free between staff houses and hotel
Hours: 40 per week
Progress your pay as you develop your skills through our Skills Development (SD) Levels:
- SD1: £10.50 per hour, and be eligible for £130 gratuities per month
- SD2: £10.75 per hour, and be eligible for £150 gratuities per month
- SD3: £11.00 per hour, and be eligible for £170 gratuities per month
- SD4: £11.25 per hour, and be eligible for £190 gratuities per month
- SD5: £11.75 per hour, and be eligible for £210 gratuities per month
- SD6: £12.25 per hour, and be eligible for £230 gratuities per month

THE ROLE OF WAITER @ GILPIN SPICE
Responsible for setting up the tables before the opening of the restaurant. During operating hours, serve water and bring other items as directed to the tables. Responsible for cleaning the tables and restaurants after customers leave.
- Knowledgeable on our offering of a number of different dining experiences such as dining with our chef at a chefs table to private dining.
- You’ll be serving our customers, become knowledgeable on the menu items, being able to describe these to guests.
- Knowledgeable on the restaurant information and hotel as a whole.
- Able to set up for breakfast service and dinner
- Provide guests with a 5* experience
- Assist the Senior Waiter with restaurant service.
- Work closely with the kitchen & bar team
- Collects food orders from the kitchen
- Maintains familiarity with menu items, restaurants information, and the hotel as a whole.
- Learn and be able to run the still room sufficiently
- Communication between kitchen and chef de rangs
- Main high standards of Procedures within the restaurant
- Maintain a clean and professional environment
- Prepare mise en place for the restaurant
- Preparation and serving of Hot drinks
- Keeping up do date with all SOP’s that are relevant to them
- Completing task set out by superiors to a consistent and high standard.
ABOUT OUR FOOD
Diners are ‘spoilt for choice’ when visiting Gilpin Hotel & Lake House in 2023 as the property completely transformed its F&B offering by becoming THE foodie destination of the region. Three new high-profile chefs were appointed to oversee its three restaurants. Though the three restaurants are very different, led by 3 very different chefs, they work together, sharing the same vision, commitment, passion and values, built on sustainable sourcing with low to no food miles and supporting local producers. Under the guidance of owner Barney Cunliffe, the property has also introduced its’ strategy for sustainability, which include new procedures and techniques for procurement, scrutinising the supply chain and developing a new Culinary Centre, complete with its own on-site butchery, and working with local farms and specific herds.

Aakash has exciting plans to transform the menu at Gilpin Spice which is renowned locally for its inspired fusion of Asian-influenced cuisine. Aakash views the property’s new sustainable and sourcing strategy as a particular positive for Gilpin Spice, throwing down a challenge that he hopes will lift the new menu to new realms of possibility.
Tom ‘Westy’ Westerland – Head Chef – Knipe Grill at Gilpin Lake House

Westy has brought his own style of cooking with coal and various types of wood to the restaurant. His focus is on storytelling and communicating that to the guests so that they know the background of the dish and what the inspiration was behind it.

Home-cooked food for just £1 per meal. A breakfast of toast and cereal is free, and available at all times. We also have snacks and tasty treats available throughout the day.
SUBSIDISED ACCOMMODATION
Fantastic subsidised shared staff accommodation, some at the hotel, some in the countryside, and some in the centre of Windermere and Bowness. In all accommodation there is a shared kitchen and lounge area. We spring clean your room before you move in, meet you, show you around, and settle you in with a welcome pack, and check all the accommodation monthly to make sure everything is still lovely. Our staff accommodation ranges from mobile static homes to ensuite rooms in Bowness and Windermere (from £130 to £350 per month including bills). If you’re really trying to save and don’t have a lot of stuff, there are a few very small mobile static home rooms that we don’t charge anything for.
