Job Purpose
To assist the Head Chef in the day to day management of the kitchen, to cook and present food to an excellent standard and to creatively input to the menu development
Main Duties
● Assist the Head Chef (and at times the Area Chef/F&B Operations Team) to create exciting and vibrant dishes, fitting to the customer profile and within budget following all creation and approvals processes
● Delivering our menus to company specification, served in a timely manner from the kitchens. Prepare dishes with care to company specification sheets. Preparing and cooking food to consistently high standards of presentation, following company plating guidelines.
● Deputising for the Head Chef in the their absence and leading the team on shifts when required
● Liaising with the bar/Cinema Management team to communicate delivery times, items out of stock and any other relevant information necessary to present a professional service to the customer
● Assisting the Head Chef with Stock Management (including ordering, rotating, stock taking and processing stock) so that adequate levels of stock are held, internal and external processes are followed and wastage is kept to a minimum.
● Order stock following company stock management policy and other guidance to acquire stock through pre-approved suppliers ensuring full availability of items, controlling waste, margin and profitability
● Receive deliveries as per company procedure, ensuring discrepancies are actioned and HACCP procedures are followed ● Ensuring Food Hygiene, Kitchen Cleanliness and other health and safety responsibilities are followed at all times maintaining a 5* rating, taking responsibility for day to day cleaning as well as weekly deep cleaning tasks. These responsibilities should be trained, understood and followed by the team
● Assisting the Head Chef with training and managing of the other kitchen team members, ensuring that all kitchen team members knows exactly what is expected of them and is performing their role to the best of their ability
● Undertaking such administration to ensure the smooth running of the kitchen
● Delegate effectively to ensure menu is delivered consistently at all times
● Undertake any other duties which may be reasonably requested of you by the company for the effective functioning of the kitchen or cinema and to maximise it’s business
For your application to be successful, you will have relevant experience working in a similar role in a professional food and beverage operation. We also welcome applications from Chefs ready to take the next step. You will be experienced in managing a team of chefs, and front of house staff, and should be comfortable working to tight budgets and targets as well as stock control and ordering processes. As our Senior Sous Chef, the majority of your time will be spent in the kitchen, the remainder delivering and managing the F&B proposition, and as such, you must be an effective trainer and delegator to ensure standards are met at all times across front and back of house.
