JOB DESCRIPTION

JOB TITLE Kitchen Assistant

RATE of PAY : £ 10.10 per hour

RESPONSIBLE TO Cook/Home Manager

JOB PURPOSE

  • To support the Cook in daily duties in the kitchen.

KEY RESPONSIBILITIES

  • To ensure that the kitchen is kept clean at all times and to ensure Health & Safety is maintained.
  • To ensure that the dishes and cutlery are washed, dried and sorted and made ready for the meals and teas.
  • To ensure that the equipment, floors and walls are kept clean at all times.
  • Sorting, storing and distributing ingredients
  • Assisting chef with all food preparations: washing, chopping, cutting and cooking foodstuffs and helping to prepare salads and foodstuffs.

GENERAL CLEANING OF THE KITCHEN

EVERYDAY

Thoroughly clean with hot water and appropriate detergent and dry with absorbent towels the following:

  • All work surfaces and ledges
  • Hotplate cupboard (inside and out and including doors and handles)
  • Microwave Oven (inside and out and including the turntables plates)
  • Oven doors
  • All sinks (including wash hand basin)
  • All draining boards
  • Trolleys and trays
  • Dishwasher casing
  • Flooring (wash thoroughly everyday)
  • Deep fat fryer casing and lids
  • All hobs/grill/peeler/slicer/mixers, etc. after each use
  • Fridges and cupboards are to be tidied daily

  • All equipment and utensils used in the preparation of food must be thoroughly cleaned after each use
  • Record activity using the Kitchen Cleaning Schedule

DEEP CLEANING OF THE KITCHEN

In addition, everyday a designated part of the kitchen shown on the schedule will be deep cleaned following the directions listed:

  • All pipe work, switches , handles and hinges
  • All shelves must be cleaned
  • Door frames will be cleaned with special attention paid to the tops of frames

WORK SURFACES

  • For work surfaces and sinks, pay particular attention to the under edges. Include the leg of work benches. Drainage areas are to be scoured and checked for blockages or accumulations of grease, etc.
  • All work surfaces should be scrubbed after use using a bowl of hot water and detergent, with a second bowl of hot water for rinsing. Both should be changed when they begin to appear dirty.

· After scrubbing, the surfaces must be dried with clean, absorbent, disposable paper towels.

FLOORS

  • All flooring in the area must be cleaned, particularly under shelving which should be removed if possible for easy access. Any equipment which can be moved should be to allow access. Pay particular attention to edges and corners and around the base of static equipment.
  • Floors should be swept.
  • Floors can be cleaned either with electric floor scrubbers or by hand using a tough bristled brush and a bowl of hot water and detergent. Finish off by rinsing with a mop using hot water which will dry on contact with air.
  • Always display hazard cones or notices to warn that the floor is wet.

CEILINGS AND WALLS

  • Ceiling and walls should be wiped with a clean, damp cloth using a detergent. A steriliser should be used for areas where splashes and stains may occur, i.e. behind sinks or work surfaces.
  • Sign and record on the Kitchen Cleaning Schedule the areas cleaned.

FOOD PREPRATION

  • Be responsible for your own section
  • Preparation of the everyday snacks both hot and cold foods, under the guidance of the cook, for the clients.
  • Preparation of vegetables as per chefs request

TEAM WORK

  • To participate in the planning and meeting of individual residents’ needs as appropriate.

HEALTH & SAFETY

  • Employees are responsible for being aware of the responsibilities placed upon them under the Health & Safety Act (1974) and to ensure that agreed safety procedures are carried out to maintain a safe environment for employees, residents and visitors.
  • Wash up after meals. Ensure all crockery and equipment is cleaned and stored appropriately, and that the overall cleaning of the kitchen area (and, where appropriate, the dining areas) is carried out effectively.
  • Ensure statutory Health and Safety standards in the kitchen and dining areas.
  • Report immediately to the Home Manager, or Person in Charge, any illness of an infectious nature or accident incurred by a Client, colleague, self or another.
  • Understand, and ensure the implementation of, the Care Centre’s Health and Safety policy, and Emergency and Fire procedures.
  • Report to the Home Manager, or the Handyperson, any faulty appliances, damaged furniture, equipment or any potential hazard

TRAINING

  • To participate in staff meetings and training activities as required.
  • To ensure Training & Development folders are used and updated following training.

QUALITY

  • To ensure that standards of care and work are maintained as set down by the Home Manager/Deputy in his/her absence. .
  • Report any faulty appliances or damaged equipment or potential hazard.
  • To comply at all times with policy and procedures as laid down.

POLICY AND PROCEDURE

  • To adhere to all policy and procedures as laid down by Absolute Care Home and the Home Manager.

  • All information concerning residents and staff must be treated as strictly confidential at all times.
