Mangrove is looking for 2 Chef to join our team tandoor chef and main chef and work under the direction of the management . The Chef will be responsible for preparing food to the specifications of the cookbook and following proper food safety procedures. The successful candidate will play a key role in contributing to our customer satisfaction and acquisition goals.Responsibilities

Tandoori Chefs responsibility

  • Cook tandoori dishes on the menu following recipes
  • operations of tandoori dishes to produce traditional tandoori naan and tikkas
  • to use the sheeks and naan together in the same clay oven
  • must be able to operate the tandoori oven and chargrill oven as well
  • prepare the naan dough in a timely manner using the dough machine
  • operating and maintaining the clay oven, dough machines, and Indian cooker
  • Preparing and cutting the chicken, lamb prawn for the tandoori dishes
  • Managing, and training new assistant tandoori chefs
  • Allocate and oversee the work of the junior kitchen staff team including cleaning schedules
  • Ensure that all dishes are presented in an attractive manner.
  • Stock check and stock control of tandoori and fryer sections
  • Overlook the cooking of the fryer section

Head chefs/2nd chef Responsibility

  • Work with the main chef to aid with the preparation of dishes
  • Organise cleaning rota
  • Ensure that all dishes are presented in an attractive manner.
  • Calculating the cost of the ingredients
  • Training of staff,
  • accurate stock records to minimize losses and support supply ordering
  • Conducting regular staff performance reviews and taking appropriate action to rectify any deficiencies
  • Overlook all other staff and monitor the cleanliness of the kitchen
  • Be able to adapt to different Indian cuisines, such as south Indian, Bengali, Nepalese
  • Able to aid the head chef in the decision-making of new dishes
  • Overlooking all other departments ie: tandoori side, fryer side, kp, and front of the house staff, so they implement a high service and product
  • Able to learn new dishes and adapt to change
  • Must make a rota for kitchen staff with the head chef
  • Be able to work under pressure serving 100 customers at once
  • Operating excel, word documents
  • Must know the number of mixers of the spices such as cumin, jeera, haldi, madras power.
  • Has an overall knowledge of the section of the kitchen such as the tandoori side.
  • Must be able to operate, main Indian cooker, clay oven, dough machines, traditional charcoal machine
  • Be able to cut garnishes to make the food look presentable
  • Must have a vison to introduce the new way of cooking which is contemporary street food
  • Set up and stocking stations with all necessary supplies
  • Prepare food for service (e.g. chopping vegetables, butchering meat, or preparing sauces)
  • Cook menu items in cooperation with the rest of the kitchen staff
  • Answer, report and follow executive or sous chef’s instructions
  • Clean up station and take care of leftover food
  • Stock inventory appropriately
  • Ensure that food comes out simultaneously, in high quality and in a timely fashion
  • Comply with nutrition and sanitation regulations and safety standards
  • Maintain a positive and professional approach with coworkers and customers

Experience & Qualifications

  • Culinary degree preferred but not required.
  • Previous experience as a chef preferred but not required.
  • Experience in a high-volume restaurant preferred but not required.

Job Type: Full-time

Salary: £23,224.00-£30,000.00 per year
