Job Scope
Responsible for managing the F&B spaces in your designated area, ensuring quality service and standards while delivering a guest/member experience that is unique. To ensure that the highest standard of food and beverage and hospitality are demonstrated at all times. To complete all relevant procedures in relation to the respective department as laid down by the company. Promotes the desired work culture around our company values.
Key Job Responsibilities
- Manage all F&B areas in The Sloane Club to the highest attainable standards ensuring member satisfaction by paying special attention to local market demands and seasonable availability.
- Supervises and leads the delivery of all Food and Beverage employees, facilities, sales and costs, to ensure maximum departmental profit is achieved.
- Controls and analyses, on an on-going basis, in order to optimise the following:
- Quality levels of product and service exceeding expectaions
- Member satisfaction
- Merchandising and marketing opportunities
- Operating costs
- Cleanliness and hygiene standards .
- Establishes and maintains effective employee relations.
- Supervises and coordinates pricing and preparation of menus, beverage and wine lists.
- Coordinates with the Finance team to determine the minimum and maximum Food and Beverage par stocks. Approves all wine and beverage purchases and other Food and Beverage items in accordance with quality and quantity standards.
- Ensures all F&B Staff wear appropriate uniforms in order to reflect a positive brand image.
- Assists with cover of Duty Manager shifts when required.
- Conducts daily briefings and monthly meetings with Food and Beverage team relating to, but not limited to, the following:
- Overall Food and Beverage financial results and profitability
- Projected business and Operations results and challenges
- Changes in procedures and any new policies & procedures
- Quality, sales and any efficiency improvements
- Attends all other meetings as required
- Implements a daily, weekly and monthly checklist for all Food and Beverage departments.
- Keeps aware of trends, systems, practices and equipment in Food and Beverage preparation and service in the hotel and restaurant field
- Interacts with individuals outside the hotel including, but not limited to, clients, suppliers, government officials, competitors and other members of the local community.
- Actively participate in the Marketing activities promoting the Club/ Restaurant on social media.
- Take appropriate action to anticipate and/or resolve member/guest complaints.
- Train food and beverage team in food & beverage knowledge and food service.
- Performs other reasonable duties as specified and requested by the General Manager.
Health Safety & Security
- Demonstrate a comprehensive understanding and awareness of all policies and procedures relating to Food safety, Health, Hygiene and Fire Safety.
- Familiarise yourself with emergency and evacuation procedures.
- Ensure all security incidents, accidents and near misses are always logged in a timely manner and brought to the attention of your line manager.
People Management
- Work with the Company’s Human Resource Department to include :
- Planning for future staffing needs.
- Recruitment in line with company guidelines.
- Prepare detailed induction programmes for new staff.
- Maintain a comprehensive, current and guest focused set of departmental standards and procedures and oversee their implementation.
- Ensuring training needs analysis of your department is carried out and training programmes are designed to implement and meet department’s needs.
- Is responsible for the training and development of the food and beverage team
- Maintain training records for all direct reports and ensure they all do the same for their staff.
- Conduct probation and company framework performance appraisals (4.8.12 week, regular 121 and Gazelles processes) in line with company guidelines.
- Coach, counsel and discipline staff, providing constructive feedback to enhance performance.
- Approve annual leave requests whilst considering peaks and troughs in the business.
- Regularly communicate with staff to maintain good relations.
