Job description
RIU Hotels and Resorts is seeking an Accounting Clerk for our Fisherman's Wharf location in San Francisco. With a presence in 19 countries and over 100 hotels worldwide, we are a well-established company in the hospitality industry. Our four RIU Plaza locations in the United States are situated in Miami Beach, New York City, and San Francisco.
Dish Room:
o Clean all dirty dishes throughout shift; scrub (hot soapy water), spray and run through
dish machine.
o Keep dish room picked up and clean throughout shift and detail clean before end of the
shift, clean all counter tops making sure to sanitize these areas as well.
o Regularly sweep and mop as needed and at end of shift to maintain sanitary
environment.
o Maintain dish machine by changing water every two hours or when it becomes dirty.
Breakdown and thoroughly clean the dish machine by cleaning all catch trays,
breakdown and clean all spray nozzles. Scrub all spray curtains. Clean out filter basket/s.
o Two times a week; clean out food filter baskets on grease traps located under dirty dish
counter and under three compartment sinks.
o At end of shift; lift all floor mats, hang on mat hanger cart and move outside to degrease
and spray off with “hot water” hose. Let drain outside for next steward to bring in and
put back in place.
- Three Compartment Sink:
o Clean all dirty pots, pans and sheet pans using wash, rinse and sanitize procedures
o Regularly sweep and mop the floor in this area and make sure “wet floor” signs are in
place for safety.
o Report any sink drain back up to engineering so it can be cleared as soon as possible.
- Kitchen:
o Assist cooks with any meal plate up for cafeteria and or banquet functions
o Set up hot box for meal periods with canned heat and or plug in to heat up. Also, load
with plates.
o At end of shift; lift all floor mats, hang on mat hanger cart and move to back
dock/outside to degrease and spray off with “hot water” hose. Let drain outside for next
steward to bring in and put back in place.
o Sweep and mop kitchen as needed throughout shift and at the end of the shift.
o Sweep and mop walk-in refrigerators in store-room and kitchen area.
o Sweep and mop food storeroom at end of shift
o Remove all cardboard boxes throughout the kitchen area and storeroom. Spray out “box
cart”
o Restock kitchen line and front-line area with clean plates and other food service
equipment.
o Clean top and bottom of preparation tables throughout kitchen, as well as front line
area counters and equipment to include counter top toasters, refrigerators.
- Cafeteria:
o Clean and sanitize all tables, chairs, napkin holders and condiments throughout shift.
o Sweep and mop cafeteria at end of shift.
o Empty, clean, sanitize and re-bag all garbage cans in cafeteria.
o Set up salad bar with ice and food as well as breakdown and melt ice at end of shift.
o Clean out all “hot wells”; remove water, and sanitize for next service.
o Clean and sanitize all counter top areas in cafeteria.
o Clean and sanitize all refrigerators, beverage dispensing machines, ice containers, etc. at
end of shift.
- Misc.:
o All food and beverage, kitchen and service utility carts are to be cleaned and sanitized at
the end of every shift on the back dock, using; degreaser (if needed), hot soapy water &
brush, hot water rinse and sanitize (Ecolab/Yellow).
o All food, garbage and recycle collection cans are to be thoroughly cleaned using;
degreaser (if needed), hot soapy water & brush, hot water rinse and (Ecolab/Yellow)
sanitizer before being brought back into the hotel for use.
o Follow Cleaning schedule as outlined in “Railroad Cleaning” posted in the dish room.
Job Type: Full-time
Salary: $25.00 - $28.00 per hour
