Position: Food and Beverage Team Member
Department: Guest Service – Native Edinburgh
Relationships: Reports to Operation Manager
Objective

Our Counter and Lobby areas are lively neighbourhood space, home to a curation of eclectic drinks, delicious food and events.
Objective
To maintain a consistent, accurate and knowledgeable level of service within the lobby, bar, and Counter, to demonstrate our great value. With good knowledge of food, coffee and alcoholic beverages, along with a friendly and approachable manner, always ensuring guests are served efficiently and with confidence. A professional and methodical approach to working with high standards of hygiene and a good eye for detail.
Our Counter F&B offering is shared with reception, we value cross training and hybrid roles for all our staff.
Responsibilities
Financial
- To maximise average spends through using effective up-selling techniques as appropriate.
- To prepare food in our kitchenette
- To understand daily departmental costs and how they influence profit and loss results.
- To ensure the procedures for movement and security of stock are maintained at all times.
- To ensure that billing and till procedures are maintained at all times.
- To attempt to reduce the breakage of glassware and crockery where possible.
People
- To participate in training and development for Food and Beverage procedures and product knowledge, and FOH trainings.
- To develop a close working relationship with all departments, colleagues and managers to ensure guest expectations are met.
- To develop rapport with all customers in order to maximise sales opportunities and generate business for the future.
- To co-operate with all members of the team to provide the best possible service and product.
- To assist with training within the department when needed.
- To participate fully in departmental briefings and meetings.
- To assist in maintaining a positive culture throughout the department.
Service and Product
- To be on shift in good time for service, and to provide a focal point for our guests.
- To ensure all allergens are recorded and communicated
- To ensure correct MEP is provided ahead of service and during service to guest at all times.
- To ensure knowledge of products and services.
- To ensure effective daily communication with other team members,
Reception, Meetings and Kitchen.
- To maintain levels of service that consistently exceeds the expectations of our guests.
- To be aware of ambience and the standards of service within the department, and to work to the SOP/OoS at all times.
- To ensure the standards of maintenance and cleanliness within the ground floor is maintained at all times.
General
- To ensure all statutory regulations are adhered to, and to ensure that liquor procedures are upheld as per the conditions of the liquor licenses.
- To undertake any reasonable requests made of you by the company including flexibility in hours, location and responsibilities.
- Be willing to help other departments of the hotel wherever possible and to understand the flexibility required when business levels peak and trough, to deliver the best possible service.
- To ensure that all personal statutory regulations are observed and that you comply with these requirements.
- To comply with all policies and procedures as written in the staff handbook.
