About Us

Thyme was born from Caryn Hibbert’s ambition to restore a collection of magnificent barns and farm buildings; a desire to give them a new working purpose connected to the land as they always had been, but with a modern purpose that would ensure their survival. It has been a long journey, a natural evolution that has far exceeded the initial ambition of the Cookery School, launched in 2009, and represents a complex mix of family, restoration, farming, education, and hospitality (Restaurant, Hotel, Pub and Spa).

The story of Thyme is one of growth and sustainability, continuing to learn and work with staff and guests to ensure that the excellence of the brand experience is underlined by the strapline “for the love of the land” – a thoughtful narrative referencing our footprint in the local and global landscape.

Our ethos is simple. Our dedication is resolute. Welcoming our guests to connect with nature and conserving the beauty of the land through generations of love, for generations to come.

At Thyme, our founding ethos is to slow down and reconnect to nature. We have curated this connection through the floriferous design of our rooms; our focus on modern British seasonal food and botanical cocktails & local wines, our natural spa treatments focused on breath & meditation, our nature inspired retail brand, and the conservation of our beautiful water meadows abundant with wildlife.

We aim to reconnect not only our guests, but also our team to nature and promote living in harmony with the wild.

Our Culture

We seek to cultivate a welcoming, caring, positive and supportive culture, defined by inclusivity, accountability, and recognition. Effective communication, listening and a commitment to health and wellbeing serve as the bedrock of our culture.

Our Values

  • Considerate - Being thoughtful and Considerate in our actions and their impact on people and the planet
  • Consistency - Delivering Consistency of performance and stability through collaboration and communication
  • Integrity - Always displaying total Integrity, creating an environment where respect, honesty, and trust, thrive.
  • Pride - Having Pride in who we are and what we do, and the sophisticated style with which we do it
