Bluebird is celebrated as Chelsea’s leading neighbourhood restaurant, steeped in history the Grade II listed building, originally designed by Robert Sharp in 1923 as the Bluebird Motor Garage, opened as a Conran restaurant before it was taken over by D&D London in 2006.
KEY RESPONSIBILITIES
- Ensuring standards of Health & Safety and Food Safety meet both legal and Company requirements.
- Reporting maintenance issues to Joblogic and following up with TSM
- Pest control management on site in conjunction with Nightshift pest control
- Purchasing (chemicals and disposables supply)
- Supporting Executive Chef and Head Chef to maintain a high level of hygiene in the kitchen
- Completion of Internal audits (Health & Safety, food safety and fire safety, etc.)
- Allergens control and management on Alert 65 – absolutely not. This is Exec/Head Chef and GM reponsibility
- Supporting Executive Chef and Head Chef in maintaining HACCP on Alert 65
- To record cases of alleged food poisoning on Alert 65 and support management team with collating documents for investigation.
- To support the General Manager with the review of risk assessments on Alert 65
- To ensure COSHH risk assessments on Alert 65 are kept up-to-date
- Waste management need to add more detail here?
- Following up Alert 65/EHO reports/audits and supporting the management team in completing the actions and recommendations
- Maintaining stock relevant to BOH team operations
- Spot checks of food safety operations during service and reporting to GM and Exec Chef any findings
- Weekly fire safety check
- Managing Rota for both sites
- Hiring/ appointing and maintaining moral culture of the team
- Inputting Rota and holidays for BOH team (Fourth hospitality)
- Managing basement space and general stock rotation held
- Overseeing receiving and storage of kitchen equipment
- Maintaining high level of personal hygiene for self and enforcing the same standards for team.
- Control and analyse, on an on-going basis, the level of the following:
- Costs
- Quality of support provided to other sections.
- Condition and cleanliness of facilities and equipment
