Job description

Be part of a modern & growing Biltong Company, specializing in making exceptional biltong and drywors from only Wild meats.

You will have the opportunity to make Venison Biltong, from haunch to finished product, help with recipe development & sell direct to the public at farmers markets and festivals.

Hours: 30-40 per week. Flexible to fit around your commitments. Most hours to be Monday - Friday, but also the opportunity to join the sales force at weekends, at Farmers Markets and Festivals

As this is an apprenticeship role, you will come to college for training. Please consider how you will commute to and from Plumpton College once a week.

Forest Row is on 3 regular bus routes (270, 291 & 261).

What will the apprentice be doing?

  • Breaking down venison haunches, cutting excellent steaks
  • Spicing and hanging the biltong to dry
  • Packaging finished biltong and helping with other parts of the business process
  • Potential to help with sales, either on site or at markets & festivals.

What training will the apprentice take and what qualification will the apprentice get at the end?

The final certification will be for L2 Butchery.

The apprentice will learn:

  • Knife skills - including cutting, boning, trimming and mincing of meat
  • Health and safety practices, food safety and hygiene and key legislation
  • Using butchery tools and machinery – including mincing, sausage making, bacon curing, vacuum packing
  • Business profitability, maximising productivity, efficiency and customer care
  • Team work and customer care skills
  • Specialist retail shop or processing plant butchery skills

Qualifications Awarded

  • Butchery Level 2 Apprenticeship Certificate
  • Level 2 award in food safety
  • Level 2 award in health and safety
  • Level 2 award in knife skills
  • Level 1 in maths and English (if applicable)

What is the expected progression

As we grow, there will be opportunities right up to Production Manager or Sales Executive.
