As a specialist Filleter, you will be responsible for the filleting of fish for both retail and Wholesale customers within a safe, clean working environment ensuring maximum yield without compromising the quality standard of the product.
Duties and Responsibilities
- Maintain and monitor product quality throughout the filleting process
- Maintain control of your yields daily
- Responsible for reporting yield anomalies to the Fresh & Frozen Processing Manager
- Assist in filleting for product development
- Fillet fish by hand – various species (flat/ round)
- Correctly and safely sharpen filleting knives
- Assist the Technical Team in promoting Good Manufacturing Practices and HACCP awareness in your area
- Maintain personal hygiene standards
- Maintain and contribute to continuous improvement of food safety standards in the working environment
- The correct lifting of boxes of fish into tubs according to company procedures
- Undergo Company in-house or external training, and take part in refresher training as and when required by the Company as per the company policies and procedures
- Ensure all team members pursue safe working practices and all accident and reporting procedures are adhered to
- Compliance Health and Safety policies, procedures and legislation
Skills and Specifications
- Working knowledge of GMP and HACCP
- Level 2 Food Safety
- Flexible approach to working
- Reliability and good timekeeping
- Able to work on your own and as a team member
- Excellent understanding of fish species
- Understand how to fillet fish by hand and maintain product quality throughout the filleting process
- Good awareness of yield requirements and expectations
- Must have excellent knife skills
- Be able to work quickly and accurately
- Ability to lift
- Knowledge of factory environmental standards
- An understanding of health and safety
The rate of pay is structured on a minimum base rate of 40 hours per week plus bonus per kilo per cut thereafter (Piece work – details to be discussed at interview)
