At Padippura we are growing and planning to expand at a rapid rate and would like a successful South Indian chef to join us in our growth.We are looking for someone with South Indian kitchen experience, who can make “Kerala Porotta” and “Dosa”- this is essential. Can be from any part of the world as we can provide support with accommodation if this is necessary.As a Kitchen Chef, you will be responsible for preparing and cooking authentic South Indian dishes while maintaining high standards of food quality, taste, and presentation.The work is hard, but I am sure as an experienced Chef you will already know this it will be rewarding. You will be working with other chefs who have ample experience and passion towards working to be a shareholding partner of the Business. We need someone who can work in a team environment.Responsibilities:1. Menu Planning: Collaborate with management to develop an enticing South Indian menu that reflects the cafe's concept and meets customer preferences and dietary requirements.2. Food Preparation: Prepare and cook a variety of South Indian dishes, including Kerala Porottas, Dosas, Appam, Vadas, sambar, chutneys, and various curries, while ensuring adherence to recipes and maintaining consistent taste and quality.3. Ingredient Selection: Source and select fresh, high-quality ingredients for South Indian recipes, ensuring their availability and maintaining inventory levels. Monitor and manage ingredient costs effectively.4. Kitchen Operations: Maintain a clean, organized, and efficient kitchen environment. Monitor and control food wastage, ensuring optimal utilization of ingredients. Adhere to health and safety regulations and maintain hygiene standards.5. Staff Training: Train and mentor kitchen staff if required in preparing and cooking South Indian dishes. Guide proper cooking techniques, portion control, and presentation to ensure consistency and quality across all dishes.6. Quality Assurance: Conduct regular quality checks to ensure the taste, texture, and presentation of South Indian dishes meet established standards. Make necessary adjustments as required.7. Menu Development: Continuously explore new South Indian dishes and variations to keep the menu fresh and appealing to customers. Introduce seasonal specials and innovative creations.8. Order Management: Coordinate with the purchasing team to ensure timely delivery of ingredients and maintain appropriate stock levels. Monitor inventory and direct the corresponding staff to place orders when necessary.9. Collaboration: Work closely with the cafe's management team, including the co-chef, to coordinate kitchen activities, ensure smooth service, and address any operational issues.10. Food Safety and Sanitation: Follow proper food handling procedures, maintain cleanliness and sanitation in the kitchen, and ensure compliance with food safety regulations.Requirements:1. Prior experience as a South Indian Kitchen Chef or in a similar role is preferred.2. Proficient in cooking authentic South Indian cuisine, including Kerala Porottas, Dosas, Appam, Vadas, sambar, chutneys, and various curries.3. Strong knowledge of South Indian spices, flavours, and cooking techniques.4. Ability to work in a fast-paced environment while maintaining attention to detail and quality.5. Excellent organizational and time management skills.6. Team player with strong communication and interpersonal skills.7. Familiarity with health and safety regulations and food handling procedures.8. Creative mindset with the ability to develop new dishes and adapt to changing culinary trends.Experience:South Indian cooking: 5 years (Preferred)Chef: 2 years (Required)Dosa making: 2 years (Required)Kerala Porotta making: 2 years (Required)What skills or experience do I need?Experienced in making Kerala Breads, can-do attitude and a positive mindsetWhere is the role based?This role will be based in Leeds.
