A busy Indian restaurant based in Croydon is seeking an experienced Chef with experience in working within a South Indian kitchen. You will have the required level of skills and knowledge for preparing, cooking and finishing complex made to order regional and traditional Chettinad Curries with South Indian twist using fresh ingredients and traditional cooking methods. You will be required to prepare fresh ground Chettinad masalas at Kitchen, prepare complex marinades, concentrated stock, herb & spice blends, and ingredient fusions as formulated by our Head Chef. You will also be involved in planning of seasonal dishes and specials in addition to our established menus.The Chef will also specialise on Biryani Dishes that is increasingly become popular order in our restaurants.Further duties will include monitoring and management of food waste, routine stock ordering, routine quality checks, implementing and ensuring compliance of hygiene and health & safety guidelines. You will also regulate and monitor food temperatures, and assist in cost analysis and review, performing key duties as assigned.To qualify for selection you should have the following minimum requirements:High level creativity and competency in preparation and cooking skills of Chettinad dishes and regional South Indian dishes and be able to demonstrate skills in preparing the above food· Expertise in the creation of high quality spice fusions, marinades and Chettinad curry bases.· Previous experience at required skill level· Willing to assume responsibility· Creative and passionate about regional Tandoori cuisines and Curry Dishes.· Excellent Communication skills in English.· Maintain personal hygiene and highest professional food quality, safety andsanitation standards in the kitchen· A hardworking, Self-confident individual who can work under pressure whilstmaintaining agility and composure.Job Type: Full-timeSalary: £21,000.00-£26,000.00 per yearBenefits:Discounted or free foodFlexitimeSchedule:FlexitimeMonday to FridayWeekend availabilityWork Location: In personApplication deadline: 27/10/2023Expected start date: 14/11/2023
