Job description

In the heart of Cardiff in the shadows of the world famous Cardiff Castle, the restaurant is set for theatre with our open kitchen showcasing charcoal grills and dry ageing cabinets displaying whole cuts of beef ready to be cut into our signature steaks.

We select our beef from farms in Wales & the South West, all which have been raised on pasture. We only buy native suckling breeds of beef and dry age it for a minimum of 35 days. Our in house butchers cut the steaks fresh for each service. Our signature House Cuts are larger steaks designed for sharing these range from 1kg Tomahawks & Porterhouse to the prize Chateaubriand. The steak is cooked over coal and cherry wood for extra flavour. We’re proud to showcase local Welsh produce and have built great relationships with farmers and producers with more to come in the future.

The in-house butchers handpick and prepare the very best meat from farms in the south west and our chefs use it to cook beautiful, modern dishes. Senior Chef de Partie

We are looking for an enthusiastic Senior Chef de Partie to complement our existing team, who must work well in a fast paced environment, have a passion for high standards, and have loads of enthusiasm.

We work in a fast-paced and energetic atmosphere, serving the finest local produce, and offering dedicated genuine service. We are proud of what we do, the values we hold and the experience we offer. Customers vary from casual lunches, long business meetings or dining with friends and loved ones for special occasions.

As a Senior Chef de Partie, you will have a great passion for cooking, being proud of each dish that leaves the kitchen. You need to be able to support service for a busy steak restaurant at a very high standard. In return, we hope that you will learn with us to help develop your career and knowledge. There will be an opportunity to work with great products from local suppliers and to work within a creative team that can help build ideas together. Pasture restaurant is a celebration of fire-based cooking using incredible local ingredients as previously mentioned, predominantly cooked over charcoal and wood. We will have an in-house butcher that handpicks and prepares the very best meat from farms in the south-west using only pasture-fed, native breed cattle, which our kitchen team use to cook beautiful modern dishes. The menu is unique containing a range of dishes that don't restrict cooking to one cuisine and involve multiple cooking techniques.

This is the perfect opportunity for someone driven who will have the chance to be a part of opening a new restaurant and with it the possibility to grow into future roles within the company. It is also a restaurant where you can help to input in future menus that will be changing throughout the year and give you the freedom to have a bit of your personality within the menu.


Required Education, Skills and Qualifications

Ideally at least 2 years’ experience as Chef de Partie or above in a well-established restaurant. Have basic knowledge of butchery, working with fresh & seasonal produce and work well with a large team.


If successful you will be provided with:

  • Tronc, approx £1.70 per hour
