Job description

Purpose of Role

The purpose of this role is converting all private dining business across the Ivy Collection restaurants in the UK, optimizing all space and opportunities in order to achieve the departments weekly, monthly and yearly targets.

Key Responsibilities

  • Responsible for the conversion of all leads for private dining across all Ivy Collection venues through all channels – Ivvy, e-mail, phone and direct referral
  • Utilize sales strategies and enquiry management to achieve a high conversion rate desired by the business
  • Optimize spaces and adjust strategy based on demand and lead time
  • Create quote proposals on Ivvy and ensure all relevant documentation conveys details of the enquiry.
  • Follow up with enquiries in a timely manage and maintain an up-to-date event diary
  • Effectively cross-sell enquiries across the Caprice Holdings/ Ivy Collection group ensuring all enquiries are fully considered and aim to convert all enquiries
  • Negotiate sale to achieve the best result for both the business and the client
  • Prepare and contract and initial deposit request in a timely manner and ensure quick signature and payment to confirm the event in line with SOP’s
  • Send second deposit reminder for event planning team and ensure a proper handover and allocation of handover tasks
  • Once contract is signed and deposit paid handover client to event planner
  • Maintain strong relationships with clients and aim to achieve repeat business from key clients
  • Maintain strong relationships with the restaurant team to maximise revenue and optimize occupancy of the private dining space
  • Attend networking opportunities with senior sales manager and head of sales / head of sales and events to gain new leads and clients.


Key Qualities and Past Experience


  • Driven and knowledgeable in sales acumen and strategies
  • Strong representative of the Ivy Collection brand as well as Caprice Holdings
  • Organized and efficient
  • Creative and capable of problem solving
  • At least 2 years of experience in a sales role or similar in hospitality
  • Proven track record to convert event sales
  • Past history in working with luxury client base
