SUMMARY Maintain high standards of cleanliness in respect of all Food and Beverage equipment and kitchen and biosphere servery areas. Safely transporting equipment accordingly.
MAIN DUTIES
- Washing crockery, glassware, cutlery and tableware. Stacking and storing the clean equipment correctly and safely in the designated storage areas.
- Washing and sanitising kitchens pots and pans and other kitchen utensils.
- Cleaning kitchen-cooking appliances, following the strict guidelines on chemical usage and dismantling and reassembling instructions.
- Washing down and sanitising work tops, sinks, wash hand basins.
- Hosing down, mopping, washing as appropriate kitchen and servery floors, drain gullies and walls.
- Cleaning and sanitising refrigerators.
- Defrosting, cleaning and sanitising freezers.
- Cleaning dishwashers, grease traps, air filters and extractor hoods.
- Following daily, weekly and monthly cleaning schedules
- Removing all catering refuse to main area.
- Reporting any defects as found in the kitchen and servery areas and any broken or malfunctioning equipment to the Head Kitchen Porter or Head Chef
- Adhere to the food safety, food hygiene and health and safety procedures.
- Any other associated duties, which may be necessary from time to time to ensure, smooth running of the Department.
