Berenjak - International Operations Chef International Operations Chef - Berenjak Salary - Dependant on experience Schedule - Full Time Experience - Previous experience as an Operations Chef or Executive Chef in a quality restaurant group Berenjak are seeking an International Operations Chef to join their team. The role will be integral to Berenjak's international restaurants, new openings, kitchen concept development and maintaining the excellent standards set by our London venues. The role will require regular travel between London and the Middle East. This is an excellent opportunity for an Operations Chef with a passion for Iranian food and culture! At Soho, you can find our reinterpretation of the hole-in-the-wall kabab houses that line the streets of Tehran, whereas in Borough, the Berenjak Townhouse journeys out of the centre of Tehran and into the rural foothills The Position As International Operations Chef you will be responsible for ensuring the delivery of consistent, high quality Kitchen Operations; you will play a key role in Kitchen design, senior management recruitment, and menu development, working closely with our Founder Kian Samyani. You will manage the overall kitchen operations Internationally and in the UK. Key Responsibilities include: Project management, Kitchen design and execution of new openings in the UK and Middle East – we’re seeing a lot of growth over the next 3 years. Auditing and managing existing restaurants within the group, ensuring all sites meet our high expectations in terms of quality and consistency. Train, manage and mentor our culinary teams across the Berenjak group. Ensure compliance with food safety and hygiene standards. Support with menu development for new locations and concepts Overseeing of BOH financials, P&L’s, staff costs and proficient budgeting and cost control. Ensuring a positive work culture is set and maintained across all of our venues. Regular travel to the Middle East and London. If you have the following, then we want to hear from you: Previous experience as a Group Operations Chef or Group Exec Chef in a high quality Restaurant. Experience with new restaurant openings. Strong awareness of trends and seasonality of produce. A highly creative approach to your work with excellent attention to detail; Proven ability to manage, train and motivate a Kitchen brigade; Experience in managing staff costs, scheduling and reviewing staff rotas; Strong experience in finances, purchasing and menu costing; A working knowledge of health and safety, compliance and procedures; Experience with Middle Eastern cuisine (preferred but not essential).
