The Winton, Pencaitland
Set in the East Lothian countryside, The Winton, Pencaitland is seeking a Head Chef to lead its team serving a mixture between Gastropub classics & High end Seasonal Dishes. All Sauces, Prep, Terrines, Pate's & garnishes are made in house - the only things we buy in are local ice cream & Bread from our bakery.
The kitchen is custom built to ensure the working environment is as efficient, enjoyable & comfortable as it can be with 2 Rational Ovens, Thermomix, Solid Top & 6 burner stoves as well as a fantastic walk in fridge and separate preparation areas.
The main duties of the role are
- Ensuring the smooth operation of the food service and preparation within the kitchen
- The Conception, Specification, Costing & Execution of Menus & Specials
- Hiring, Training & Development of your brigade
- Working with the GM to ensure rotas are within budget & allow the kitchen to work to its best potential
- Monitoring of Wastage & Staff Food to ensure accurate GP% calculation
- Stock Rotation & Ordering to ensure minimum wastage but also having the correct par levels to ensure a customer is not left wanting
- The Implementation & maintenance of a Cook-safe food safety system
- Documentation & Safe preparation of Allergens within the kitchen
- Working with the company Executive Chef to progress apprentices within the business to become the chefs of the future
- The counting of holding stock for Head Office to calculate GP %
Experience of at least 2 years as a Senior Sous in a similar standard of Bistro/Brasserie/ Gastropub would be desireable for this role and we arent adverse to giving a commited and hard working employee the opportunity to run their own kitchen for the first time if their experience and desire match up to them being a great appointment.

As well as having a professional experience in
- Running of a service in a busy fast paced kitchen
- All necessary knowledge in food preparation and cookery to prepare & execute high end Gastropub food
- Ordering, Par Levels & Stock Rotation
- Cooksafe record keeping for food safety
- Costing of Specials & Menus
- Identification of allergens in dishes
- Recipe & menu development
Rehis Intermediate Food Hygeine or equivalent is also desirable but not essential as we believe in training and developing our employees and showing them the same commitment and respect to their careers that they show to us.
