Fitzwilliam has around 1,000 members including 485 Undergraduates, 340 Postgraduates (full time), 121 Postgraduate
(part time), 63 Fellows, 57 Bye-Fellows and 105 staff members. The College has a strong representation across all of the
major academic disciplines and a good balance between arts and sciences and occupies a seven-acre site between
Huntingdon Road and Storey’s Way. The site comprises new buildings built between the 1960s and 2000s, incorporating
the regency house ‘The Grove’ and extensive landscaped gardens. The College site is within 10 minutes cycle ride of all
the major faculties and departments.

Catering team. We are looking for a colleague who is committed to delivering a consistent high level of customer
service. You will be a team player with the ability to lead by example, and successfully motivate, develop and lead a team.
This role will require a strong management presence, and outstanding organisational skills.
Catering Department
Catering currently provides 14 servery meals per week: lunch and dinner, Monday to Sunday, including brunch at
weekends. There is also a popular Coffee shop and a Bar, which is staffed by employees.
In addition, Formal Hall is served every Wednesday and Friday in Term. Maximum capacity for Formal Hall is 150 plus
Fellows. There are many other formal College dining events throughout the year for which a high standard of catering and
service is required, including but not limited to: Alumni & Reunion Dinners; Matriculation Lunches/Dinners.
Commemoration Dinner; Foundation Dinner; GA Graduation Day.
The College has a thriving Conference business, which represents an important source of income to the College, 2
versatile main dining rooms and over 340 bedrooms available for letting during the vacations. Catering options include a
variety of lunch and dinner selections for conference guests, BBQs, breakfast service during vacations, Christmas parties
and other events. The catering department also provides refreshments for a wide variety of functions and meetings, both
College internal events as well as private external events.
Conference and catering staff work closely with the students to support and maximise opportunities for academic and
social events.
Job Function:
To assist the Interim Catering Manager in the smooth running of the Catering Department by acting, when required, as
one of the Senior Manager’s on duty and oversee the day-to-day delivery of food and beverage service to clients,
including conferences and key events. Events will come from both internal and external clientele throughout the year -
including Graduations, Charter dinner, student events as well as external events. In addition, the incumbent will take
overall responsibility for the safety and hygiene standards of operations under their supervision, including staff rotas,
training, and performance of all front of house catering team (including induction, training and appraisals).

Tenure: This post is offered on a Permanent basis

Duties and responsibilities
Deliver service for the College’s conference and functions business ensuring that the demands of a changing market are
met with the aim of ensuring the College has an excellent reputation for service.
To monitor standards of service and cleanliness and ensure consistency is maintained.
To keep under review all methods of working to ensure efficient ways of working, identifying opportunities for
improvement.
To ensure delivery and maintenance of a high standard of food and drink service. Comply with health and safety in
legislation including risk assessments and chemical data sheets, food safety, College HACCP system and allergens.
To work with the Catering Manager, FOH team, Head Chef and kitchen team, and other staff and managers, to improve
and develop the catering within the College.
Liaise with the kitchen about menus, allergens and any changes or concerns.
Liaise with the stores person regarding ordering of products and stock levels and perform stock take as required.
Operate KX and EPOS systems to monitor functions updates and daily meal bookings, to monitor staff levels needed &
liaise with senior management. Use ticketing system if Housekeeping or Maintenance work is needed.

Staff Responsibilities
To recruit, direct, and motivate the front of house catering team ensuring they can perform their duties effectively and to
the required standards.
To be responsible for staff rotas and ensure that optimum use is made of staff resources, coupled with the need to keep
overtime is kept to a minimum.
To be responsible for the performance of all front of house catering team (including induction, training and appraisals)
and, in conjunction with the Catering Manager, deal with any performance issues.
Ensure staff wear clean and appropriate clothing, including the correct presentable uniform and follow the dress code for
food service employees.
Health and Safety
Ensure that employees comply with statutory Health and Safety, and Food Hygiene legislation and the College’s Food
Safety policy as appropriate. Ensure all equipment is maintained and repaired as necessary.
All employees must adopt a responsible attitude towards health and safety and to comply with any procedures as required
by the College n order to ensure the health and safety of themselves, their colleagues and any other persons that may be
affected by their actions. They must be prepared to undertake any training provided in relation to health and safety or
which is identified as necessary in relation to their work.
Additional responsibilities:
To take an active interest in technology to support efficient working in the department and be proactive with ideas for
improvement.
Keep up to date with developments in catering.
To liaise with Fellows; students; Members; staff; external suppliers; external clients and build a professional and
collaborative working relationship.
To work at the service of all major College events such as: Alumni & Reunion Dinners; Matriculation Lunches/Dinners,
Graduations etc
To undertake any other reasonable duties, both operational and administrative, arising in the role of food and beverages
services, as directed by the Catering Manager.

PERSON SPECIFICATION
Qualifications and Knowledge
Educated to GCSE level
Level 2 Food Hygiene Certificate
A good knowledge of food service and different styles
Knowledge of HACCP principles
COSHH regulations
