Role Purpose:
Reporting into the Area Leader follow the daily production plan selecting the required recipe on the Olympus system, loading the cooking vessel with the raw materials at the relevant stages throughout the cook. Throughout the process check the quality of the raw materials, ensure traceability is recorded at all stages, follow the allergen/non-allergen procedures, reporting any issues to the Quality team. Ensure the CCP cook procedures are met and the relevant end of cook quality tests are carried out, reporting anything out of specification to the Area Leader and Quality team. This role requires a high degree of attention to detail, problem solving skills and cross-functional collaboration.
Key Responsibilities:
- Carry out pre-start checks for the cooking vessel and transfer routes are available.
- Collect the correct powder and herb packs for the recipe from the Batching area, and the relevant totes for the cook from the WIP chill area, ensuring traceability is present and correct.
- Following the recipe on Olympus, load the totes into the vessel at the required step.
- At the end of the cook, complete the required quality checks e.g. Bostwick, CCP2 (cooking only). If product is out of specification report to Area Leader and Quality team.
- Liaise with the High Risk area on the transfer of finished product.
- Using the equipment provided, manually scrub the vessel, if required.
- Follow the CIP matrix to select the required CIP level and channel on the Olympus system, starting the CIP cleaning process.
- Upon completion of CIP, manually check the vessel for cleanliness. Any debris remains repeat the cleaning process.
Knowledge Skills & Experience:
You will hold a Level 2 food safety and health & safety certificate, have good communication skills and problem solving skills and be able to use own initiative. You must have basic English and Maths skills, knowledge of computers would be an advantage. Allergen and Sensory awareness training would be an advantage, however training will be given.
