HMP Forest Bank are recruiting for a Cook to join their Catering team.
You will oversee, instruct and support the kitchen with the preparation and cooking of meals for 1,400 prisoners twice a day. You will do so in accordance with Sodexo policies and procedures using approved recipes and menus. You will also supervise the kitchen in the clean-up activity to maintain high standards of sanitation, safety, health standards and security.
Our ideal candidate will have an NVQ level 2 in cooking as a minimum and will ideally have their level 3 food safety certificate.

As well as the 16 residential units on site, there is an Education Department, healthcare centre, gym, library, workshop complex, visits hall, chaplaincy and kitchen. The prison’s capacity stands at 1,460, holding adult men both on remand or sentenced and young prisoners between the ages of 18-21 years.

Main Responsibilities- To assist in the preparation and cooking of meals for 1,400 residents twice a day
- Ensure all food is prepared and handled in accordance with the relevant food safety guidelines and Allergen awareness and compliance.
- Assist to maintain efficient and secure receipt, storage and issue of foods and provisions and maintain documents related with these systems.
- Ensure all prisoners and visitors adhere to Sodexo Health & Safety procedures and the Food Safety Act 1990
- To instruct and oversee the daily workload of prisoners to ensure timescales are met.
- Maintain awareness of security and health and safety at all times and report any issues to the appropriate department promptly.

The Ideal CandidateEssential
- Suitable qualifications for example City & Guilds 7061/7062 or equivalent NVQ level.
Desirable
- Achieve Intermediate level of food hygiene certificate.
- Experience in ‘bulk’ catering or catering for large numbers.
