The Department for Continuing Education is the University’s centre for lifelong learning situated in the heart of Oxford. The Department provides a wide variety of meals and dining for both students and external clients across its sites and provides an excellent opportunity to grow your culinary skills.
Due to high levels of business over the Spring and Summer period the Department is currently seeking to recruit a Chef de Partie. You will be responsible for preparing high-quality meals and fine dining for events and private bookings. To succeed in this role, you will have previous experience in a working kitchen as a Commis Chef and the potential to prepare a meal for 30 persons on your own. You will also have good communication skills (both written and verbal), flexibility and adaptability in your approach to work, willingness to learn and an awareness of health and safety standards and requirements.

This is a full-time position working 36.5 hours per week, five out of seven days (mostly straight shifts) and is for a six-month fixed-term period. The Department operates for 50 weeks of the year and usually closes over the Christmas and New Year period.

Responsibilities
· Prepare food, (hot and cold food for breakfast, lunch and dinner, with the addition of buffets, barbeques and canapés) ensuring that it is of a consistently high standard of quality for the Department’s customers.
· When necessary, assist or carry out kitchen porter duties such as washing and cleaning kitchen equipment and restaurant service china, cutlery and glassware.
· Ensure we cater for any customers’ dietary requirements.
· Monitor food deliveries, checking the quality of food products delivered and reporting any discrepancies to the Department and supplier.
· Report any concerns of staff performance or poor conduct to the management of the Department immediately.
· Work in accordance with the business demands of the service and work flexibly as and when required.
· Ensure the prompt service of all meals and services, at the required times, to the clients’ standards and satisfaction.
· Work in all areas/sections of the kitchen to develop a good working knowledge of each.
· Maintain own excellent standards.
· Ensure that all clients and customers are dealt with promptly and courteously, according to company standards.
· Demonstrate good communication with clients.
· Pre-empt problems with catering production and service and act to avert them.
· Assist or cover for waiting staff with front of house service in their absence or when requested to do so, to ensure staffing levels are not excessive for the service.
· In the absence of a more Senior Chef, place orders with suppliers.
Contract/financial control
· Control portion sizes and wastage, recording wastage figures as required.
Health & Safety
· Ensure that you prepare all food to good hygiene levels.
· Ensure any maintenance faults are reported to the Head Chef and Conference and Facilities Manager including any concerns of necessary repair to the kitchen facilities e.g. loose tiling, pipes leaking etc.
· Ensure that standards of personal hygiene yourself and any junior staff members are followed at all times.
· Ensure receipt, storage and handling of all food meets current hygiene legislation.
· Maintain full compliance with ISO 9002 requirements for which you have a responsibility.
· Attend training courses and meetings.
· Ensure cleaning rotas are adhered to.
· Carry out all necessary temperature records and checks.
Other responsibilities
· Perform any other duties which may be reasonably requested of you.
· Be proactive with ways to promote the department and introduce new ideas.
Key Result Area
· Demonstrate a high degree of skill in food preparation and presentation.
As a department, we run courses outside of normal office hours (e.g. over vacation periods), including evenings and weekends. There is an expectation that staff will work additional hours when required, to support the smooth running of courses or events. Such hours will be paid as time off in lieu or in line with the University’s policy on overtime.
