About HaSalon London:
HaSalon is an Israeli / Mediterranean fine dining restaurant already famous in Paris, New York and Miami, and we’re looking for a superstar Head Chef to help open it in West London early 2024! The restaurant will be open Thursday to Saturday for two dinner sittings, and as the night progresses, the room transforms to a high-energy atmosphere where guests are encouraged to dance on the tables. The restaurant will be available for private hire Sundays to Wednesdays.
The person we are looking for:
We are looking for an experienced, confident, fun loving and personable Head Chef to oversee the opening from concept to launch and who will then work with the General Manager to make HaSalon the best restaurant in London. The Head Chef will recruit and lead a team that's full of good vibes and who can deliver exceptional food consistently and in line with brand recipes.
They will have at least 1 year’s Head Chef experience in a high-volume, high-end, fine dining style restaurant, as this role will engage with our VIPs and operate in an open kitchen environment. The Head Chef will be totally obsessive about food, working only with the freshest ingredients and ensuring consistency in our product against the Eyal Shani recipe book always.
Head Chef key responsibilities:
The role will be responsible for:
- Taking responsibility for the performance of the restaurant alongside the General Manager
- Planning and directing all food preparation and culinary activities for the restaurant in line with brand recipes and expectations
- Ensuring that all departments and relevant team members are briefed on menu items, communicating all relevant provenance, allergen, nutritional and other distinctive information
- Managing and leading your team on a day-to-day basis including recruiting, training, leading, motivating and supporting them
- Arranging for equipment repairs in line with health and safety requirements and budgets
- Helping achieve budgeted food cost, sales, stock, labour costs and profitability for the restaurant
- Developing and maintaining all culinary control procedures
- Assisting in menu planning and pricing, and support on building a rich programme of original unique selling points
- Managing the day-to-day operations and activities within the kitchen ensuring the team deliver exceptional food in line with the brand guidelines
- Preparing weekly rotas for the culinary team
- Reviewing sales and food costs and GP’s, reconciling any discrepancies
- Monitoring the net income after expenses for the restaurant ensuring that the restaurant achieves budgeted food and drink cost, sales, stock, labour costs and profitability
- You will be reporting to the Managing Director
