*Bar Manager*
City of London Distillery - Home of Whitley Neill Gin
A new and exciting opportunity has arisen for a Bar Manager to join our Gin Distillery & Bar in the heart of The City of London.
Your day to day responsibilities within this role will include managing the business aspects of the bar such as keeping a current liquor license, negotiating supplier contracts, taking inventory and recording supplied, managing budgets and setting goals. Other duties will include but are not limited to:
· Overseeing the preparation and presentation of beverages to meet set standards
· Monitor cleanliness and hygiene of the bar area
· Oversee accurate cash-up procedures and ensure necessary paperwork is complete, including financial reports
· Ensure adherence to stock control procedures, doing regular stock takes and ordering as necessary, handling deliveries and rotating stock to minimise wastage
· Monitor and control budget for the beverage unit / bar, manage cash flow
· Plan and implement systems to maximise sales and revenue, for example promotional activities
· Dealing with difficult customers and resolving complaints promptly and satisfactorily
· Reach the weekly break-even in the bar
· Work towards a 30% wage budget for the bar team, and 74% GP for wet sales
· Represent City of London Distillery and Whitley Neill Gin as an acting brand ambassador
· Coordinating bar and experience bookings
· Organising and conducting distillery experiences (gin schools or tours) during a shift
The successful candidate will be confident working with diverse personalities. Within your Team you will be responsible for:
· Recruiting, training and motivating staff
· Determine staff development needs and manage their performance
· Arrange rota and management and tracking of team holidays
· Operate and lead bar team within company policies
· Delegate duties and tasks to staff to meet objectives and maximise resources
· Set and monitor quality and service standards for staff
· Communicate company policy, standards and procedures to staff
· Communicate regularly with the bar team and General Manager through meetings and discussions
· Encourage the team to raise the profile of the venue through exhibitions and cocktail competitions within the on-trade network
Hours will start at 35-40 hours p/w which will increase when required.
