The food and beverage areas of our award-winning hotel are busy and a hub of activity right from breakfast, morning coffees, lunch, refreshments for our thirsty golfers, afternoon teas and evening dinner. The hotel has facilities for small private dinners and weddings, our courtyard is great for summer barbecues and the Snug for private whisky tastings.
Our guests come from both the island and far and wide, attracted by the beauty and challenge of our renowned 18-hole links course, the wonderful wildlife, unforgettable whisky indulgencies or indeed just to relax, take in the fresh air and great views and delight in some fantastic food.
Our menus celebrate the best of Scottish coastal provenance, showcasing fantastic seasonal local produce from Islay and providing the ideal back drop for pairing our selection of fine wines and of course our famous Islay whiskies.
As a strong Food Beverage team, we are working towards AA Rosette recognition and are looking for experienced team members who can help us achieve our aspirations. As well as displaying a talent for leading a team, you’ll need to show confidence managing and leading floor operations and supporting the team in delivering the very best of service.
As Assistant Restaurant Manager, you will be responsible for managing operations to deliver an exceptional guest and team member experience; manage, train, and develop team members, and work within budgeted guidelines. Specifically, you will be responsible for performing the following tasks to the highest standards.
In return you will be able to not only enhance and grow your management skills, but also your west coast food whisky knowledge in a forward-thinking learning environment in a magical setting.
Main responsiblities and key tasks:
- Manage dining operations and maintain exceptional levels of customer service
- Manage, train and develop the team
- Work within budgeted guidelines in relation to manning levels and payroll costs
- Drive sales to maximise budgeted revenue and incentivise team members
- Develop menus with other members of the Food and Beverage team
- Evaluate guest feedback with a focus on continuous improvement
- Ensure communication meetings are conducted and post-meeting minutes generated
- Attend and contribute to all daily/weekly team meetings
- Work to deliver The Machrie Service Delivery Standards and display the desired behaviours we expect from all team members.
- Have a thorough knowledge of and adhere to the law regarding the following company regulations: Licensing laws, Health and safety regulations - Food Safety, Risk Assessments, COSHH, Manual Handling, Fire and Accident procedures.
- Be a good role model for The Machrie dress code and appearance standards and ensure your team fully comply.
The ideal candidate will have exemplary evidence of:
- Working in an AA Rosette restaurant
- Supervisory experience, preferably within the AA Rosette restaurant
- Strong leadership skills with an affinity for supporting the team to deliver the very best of service
- Excellent conflict resolution abilities, and the ability to deal with guest feedback in a timely and professional manner
- Innovative, trustworthy, and impartial
- Ability to work evenings, weekends, and holidays
APPLICANTS MUST ALREADY HOLD THE RIGHT TO WORK IN THE UK (Sponsorship MAY be considered for someone with Michelin Star restaurant experience)
Live in Accommodation
If you would be relocating to live on Islay we offer staff accommodation either on-site for those who don't drive or within a 10 min drive from the hotel if you have a car. We ask for a nominal accommodation contribution, currently £52.85 per week. Everyone is provided with their own bedroom but share communal facilities.

Team members are able to participate in the many team activities organised throughout the year from distillery visits to fun day events, quizzes, photo competition, movie nights in the hotel’s screening room and social gatherings.
The Machrie is a key part of the community here on Islay and so will you be. Getting to know the Islay golf club members, local distilleries, gin and ale providers and regular locals and visitors to the hotel.

Travelling to Islay
Islay is easy to get to with a direct Citylink bus from Buchanan Street, Glasgow to the ferry terminal at Kennacraig or two daily 30 min flights from Glasgow.
The Machrie
With panoramic views across the golf links to the idyllic 7 miles of silver sands at Laggan Bay the hotel only opened late 2018 but already has been recognised as "Scottish Hotel of the Year 2020" and our historic golf links today is ranked in the top 20 courses in Scotland.
Hotel facilities include our iconic Restaurant 18 and Stag Lounge with panoramic views across the golf links out to the west and also benefits from the spectacular evening sunsets. The Kildalton room can be used for meetings, small private dinners and weddings, our courtyard is great for summer barbecues and the Snug for private whisky tastings. There is also a small screening room (cinema) for 35 people and small Spa with a gym, sauna and two treatment rooms.
Our golf facilities include the renowned 18 hole Machrie Links, founded in 1891 it is now ranked in the top 20 courses in Scotland and the Islay Golf Club still operates from The Machrie today. Complimenting the links is our 6 hole, par 3 Wee Course, driving range and teaching studio.
