Are you an experienced Restaurant / F&B Manager looking for a fresh challenge? This is a fantastic opportunity to join our hotel team in a newly created role, where you will have responsibility to co-lead the restaurant team(s) across three hotels and deliver exceptional services to our guests.
The University of Edinburgh, through its Accommodation, Catering and Events (ACE) department, manages a large portfolio of hotels, venues, student and seasonal accommodation. This includes four hotels with circa 200 beds, The Scott, The Scholar, KM Hotel and KM Apartments: https://www.uoecollection.com/hotels/
It also includes over 10,000 student bedrooms, many of which are used during the summer for large group bookings and individual leisure guests, and over 70 meeting and event spaces.
The Opportunity:
This exciting new post offers significant opportunities to make a difference, joining us at an exciting time following a period of significant investment in our hotels. The post holder will be integral to the future success of our hotels and will play a key part in driving growth and delivering and excellent guest experiences in collaboration with the hotel’s senior management team.
You will be responsible for:
- The development of the F&B strategy and growth plans for the F&B department, taking ownership of the continuous improvement plans for restaurants, bars, lounge and breakfast services across the four hotels, ensuring that regular improvements are made to menus and services, and that we remain competitive and in line with market trends and guest expectations.
- Co-lead the Food and Beverage teams across the four hotels ensuring that all staff follow operational SOPs and deliver an exceptional level of service to our guests. This role is responsible for resource planning across the teams, ensuring the right staff levels are in place and that they receive the right training and coaching to effectively deliver the brand standards of each hotel.
- The role holder has responsibility for the delivery of food and beverage revenue targets and the control of F&B budget cost lines to target profit margins are met. They will be responsible for the budget planning processes for this area of the business, and will produce KPI reports / updates.
- The role will co-lead on the development and regular review of policies, procedures, quality standards and performance measures, ensuring they support excellent service delivery and improve efficiency. They will ensure that regular quality assurance audits are undertaken, including regular observations. They will work with external agencies to deliver an annual mystery shopping programme and will closely monitor guest feedback, using the outputs of this to inform hotel development plans.
- The role will co-lead on the health and safety plans for this area and are responsible for ensuring that all food and beverage staff adopt safe working practices and operate within the legislative requirements. This includes maintaining staff training records and conducting departmental and statutory training to include license training, weights & measures, health & hygiene and fire safety.
- The role will co-lead on the development and maintenance of systems for the Food and Beverage department. This will include working with internal IT departments and external systems/ software suppliers to ensure our systems support the delivery of the hotel’s core objectives.
- Excellent interpersonal skills with the ability and confidence to relate to staff at all levels within the organisation and have the confidence to challenge existing practices.
- Has experience of working within a 4*/5*hotel

- Demonstrable experience of leading and motivating a team.
- Ability to communicate effectively with guests, ensuring their needs are met beyond expectation
- High level of experience of F&B Experience functions
- Ability to make decisions with conviction and confidence
