Key Responsibilities

Income

  • Manage the development and the successful delivery of operational outcomes arising from the Commercial strategy for the Playhouse bar.
  • Setting Bar stock levels to ensure products are available and maximising sales.
  • Selecting products and services in line with current market and emerging trends.
  • Ensure team are fully motivated and understand the weekly sales targets through regular briefings and team meetings.
  • Work to secure additional sales through ice creams, sweets and other show related opportunities and events.
  • Work with the both the head of commercial and head of visitor services to develop and implement successful plans which gain additional sales in the auditorium.
  • Continually drive improvements through the service and product to increase profitability.
  • Ensure bar pricing is competitive and in line with local competition.
  • Create sales reports as required by the Head of commercial
  • Continually assess and evolve product selection to maximise GP%.
  • Create and drive weekly sales promotions for social media with support from Marketing and the Head of Commercial

Customer service & relationships

  • Foster a positive and proactive environment working with all departments to achieve the best experience possible for theatre goers, visitors, participants, cast and staff.
  • Develop good relationships with new and existing customers, sponsors, visitors, cast members and colleagues.
  • Ensure customer service excellence in all areas, motivating the Bar team in delivering a first class service every time.
  • Work with the Head of Commercial to encourage and develop the creative culture of Playhouse Bar within the Theatre
  • Promote a positive team ethos and ‘lead by example’ setting the pace and standard for the bar.
  • Liaise with Head of Commercial and People & Culture for recruitment and training needs of team members as the business requires.
  • Provide First Aid assistance where necessary supporting all Playhouse emergency and customer service procedures
  • Finance and systems

  • Working with the Head of Commercial, set all budgetary targets for both income and expenditure.
  • Liaise with the finance department and ensure all invoices are forwarded and coded promptly.
  • Ensure finance procedures are adhered to and strictly monitored including use of credit card terminals, cash payments, till usage and end of day cash up and recording.
  • Ensure the day book is accurate, filled in at the end of each shift and that any discrepancies are investigated and recorded.
  • Make effective use of EPOS system to identify sales trends, monitoring performance continually and ensuring financial compliance at all times
  • Manage waste control and ensure accurate recording of ullage and wastage
  • Manage petty cash system and ensure that all purchases are recorded accurately and have receipts
  • Set KPI’s with the Head of Commercial and ensure these are monitored weekly
  • Produce KPI reports as required
  • Overall accountability for the effective management of the cellar stock and procurement to ensure we meet GP% target on a monthly basis.
  • Manage the PO system, ensuring all orders are created and recorded correctly.
  • Statutory requirements

  • Ensure all equipment is maintained and any defects reported and or dealt with promptly
  • Attend training as required
  • Take responsibility ensuring all records where appropriate; food safety, health & Safety, and HACCP are kept up to date
  • Uphold the requirements of licensing laws, COSHH and health & safety procedures at all times
  • Ensure all Team members are supervised and properly trained at all times
  • To be a designated key holder unlocking and locking the premises as required adhering to appropriate procedures.
  • Team Management

  • Duty Manage and serve on the bar on a rota basis as required.
  • To produce weekly bar team roster in line with budgetary targets.
  • Conduct effective and appropriate staff training on a regular basis, ensuring all team members consistently deliver excellent customer service in line with our organisational standards and values.
  • Support individual team members’ development and performance through regular and effective appraisals and address any areas for development or improvement in a timely manner through effective performance improvement plans.
  • Lead and motivate teams to achieve targets
