ABOUT BLEECKER

Zan Kaufman founded Bleecker in 2012. We started as a food truck and today we have restaurants and delivery kitchens across London.

Our slogan is: commitment to the burger. We stand for cooking the best burgers in an equal world. We are united, passionate, empowering and diverse. In the past years we have travelled to Stockholm, been on a London Brewery Tour with the truck and collaborated with some of the best chefs and restaurants in London.

KEY RESPONSIBILITIES

  • Responsible for all aspects of your business.
  • Maintenance checks on buildings and equipment.
  • Recruit, interview, assess and support management teams for new openings and existing stores.

  • Identify and address the recruitment needs of the business, ensuring that the capability and suitability of those recruited are in line with delivering our brand standards.
  • Oversee the training of the team at all levels utilising company training materials.
    • Ensure competency levels are achieved, staff files are in good order and compliance training is completed within required timeframes.

  • Spot talent, encourage succession planning and deploy training and development resources.
  • Participate in appraisals and performance management of General Managers.
    • They must receive regular and appropriate training and development relevant to their needs.
  • Hold monthly team meetings with the entire team.
    • Confirm this information is cascading down through the team and everyone is aware of the current performance/targets of their site.
  • Adhere to all company HR policies and address any ER situations following advice from the People team.

OPERATIONS

  • Your role should primarily be hands-on, spending a high percentage of your time in the (Delivery Only) Edition sites, training and supporting your team.
  • You will be required to work shifts in-store from time to time.
  • You will carry out weekly audits to review standards; communicate results to the team in a positive fashion to foster a culture of continual improvement.
  • You must ensure a presence in the sites at peak service times including evenings and weekends.
  • Feedback constructively on all aspects of the operations.
  • Keep yourself fully abreast of standards and products and ensure any changes or issues are communicated to the relevant people.
  • Manage your time effectively; visit sites regularly according to priorities.
  • Empower your teams to exceed customer expectations.
  • Maintaining the highest standards must be the priority in everything you do.
  • Respond to customer complaints within 24 hours.


FINANCIAL

  • Act like a business owner with a focused approach of driving sales whilst being fully aware of costs, profits, resources, the competitive environment, and all other commercial aspects, in order to exceed your area’s KPI’s.
  • Ensure all sites are aware of financial policies and procedures.
  • Ensure resolution of any financial issues that head office may have with any of the sites in the first instance.
  • Have full accountability for the control of all stock within your area ensuring that products are always available, stock control procedures are strictly followed and COGS targets are achieved.
  • Have full and detailed knowledge of EPOS and be able to fully utilize its functions.
  • Ensure all stock control systems are in place – e.g., the recording of all food wastage and team food into Centegra and implementation of line checks.
  • Check weekly stock takes carefully ensuring they are fully accurate, investigate variances and review all finance KPIs with each GM every week.
  • Do one stock take per week alongside the team rotating a different site each week.
  • Ensure management & team schedules are prepared on time, that the sites are appropriately and efficiently staffed at all times and labour targets are achieved.

DELIVEROO

  • Drive overall performance in (Delivery Only) Edition sites P&Ls, food quality and operational excellence.
  • Monitor Deliveroo ratings weekly.
  • Create a culture that “Busy Mode Status” is only for exceptional emergency use.
  • Utilise all Deliveroo reports to drive revenue growth through “Perfect Stats”.
  • Liaise with Marketing to create effective marketing plans for revenue and brand growth on the Deliveroo platform.

EVENTS

  • Logistics management for events & collaborations.
  • Liaise with marketing, finance and ops to ensure events run smoothly.

HEALTH & SAFETY

Health & Safety and Food Hygiene is the responsibility of all. However, as an operations manager, you carry additional responsibility and will be held accountable for the following:

  • Standards of safety & hygiene (as detailed by the law), COSHH and Surefoot guidelines are strictly followed.
  • Adhere to safety & hygiene standards set out by Deliveroo at the Edition Sites.
  • Complete Trail daily.
  • Ensure all equipment & services are in good working order including overseeing all maintenance management.
  • Always prioritise the safety of our customers and team.
  • Communicate major incidents to the Head of Departments.
  • Liaise with Deliveroo site manager & internal maintenance team on maintenance issues.
  • Carry out monthly internal audits.
  • Report all accidents and incidents to the appropriate channels.
  • Keep allergen data up to date and accurate.
  • Address issues raised by EHO’s, Fire Safety Officers, Health & Safety Officers, Surefoot and/or Deliveroo.
