About the role:
Due to internal promotion and business growth we are now looking for a Head of Food to join us, working within our Cosy Club brand. Under the direction of the MD Cosy and in partnership with Head of Drinks/Head of Food Lounge, you will be creating and maintaining a customer-centric Food Strategy for Cosy Club that continues to deliver on YOY sales growth as well as NPS and Margin growth.
Key Responsibilities of the role:
- Drive menu evolution improving the offering whilst retaining core principles around food quality, finesse, value for money and brand fit
- Partner with the Head of Food, Lounge, to find cross-brand opportunities in relation to food spec/quality/process delivery
- Oversee dish development, supply chain (in partnership with procurement and supply chain), and SKU management to drive efficiency, ease of delivery, margin and GP
- Deliver seamless menu changes to ensure teams understand process, customer proposition and are excited and energised by menu changes
- Own the product development calendar and lead all product related governance for Cosy restaurants
- Lead your team to develop products that meet the channel requirements and the strategy
- Be the cuisine expert for the UK business be on top of food trends across the sector to drive innovation opportunities
- Help to input into the optimum kitchen design (refurbishments and new sites) where necessary in collaboration with the Head of Food Lounge and BOH development team; constantly reviewing the BOH operating framework, processes and systems to create effectiveness and consistency across the estate thinking about training materials; operating manuals; layouts; equipment and practices
- Work in partnership with Ops Chefs/Ops Mgrs/GMs/Head Chefs to gain qualitative feedback on food/process and implement medium-long term changes to the menu and processes where necessary
- Working alongside finance and systems specialists to ensure Aztec and acquire stock management and purchasing systems are accurate and effective
- Keep very close to the commercial performance of food across the Cosy estate including what’s selling; what’s not and work with the marketing team and MD Cosy to help support key initiatives
- Be responsible for all relevant menu training and cascade, working in conjunction with the L&D team and Ops Chefs to ensure that everyone knows what they’re doing and are sufficiently skilled to deliver the menu proposition
Skills & Experience required:
- Minimum 4 days a week in Bristol/South West
- Previous role in food/menu development with deep practical Chef/Kitchen experience
- Must have worked for Branded proposition
- Able to operate in a complex environment, managing multiple stakeholders, projects and priorities seamlessly
- Able to get into the detail and understand quantitative and qualitative data, as well as take full accountability of seeing through changes, not managing through delegated actions
- Inspiring presence and impact, a great communicator upwards and downwards.
- Highly commercial and analytical
- Process orientated and well organised

Salary: £45,000.00-£55,000.00 per year
