Job description
This role is for a 5* hotel in Ireland. As Head Chocolatier you'll work alongside the pastry team and report to the Executive Pastry Chef.
Ideal Chocolatier would have previous experience in a chocolate shop / lab production aas well as experience working within a large team. Ideally in 5* hotel environment.
required competencies:
- Chocolatier bon bons
- chocolate ganache formulation and knowledge of shelf life
- chocolate sculptures and amenities for specific seasons (Easter, Christmas, Valentines etc..)
- chocolate hand tempering in small and big batches
- chocolate shelling
- cocoa butter spraying & tempering
- making piping ganache or dipped ganache slabs
- other retail products to further develop within 2022

Salary: £32,000.00-£36,000.00 per year
