Job description

CGC Event Caterers are seeking a Head Chef to assist in the smooth running of the Food and Beverage department at its new venue operation at The Halls, Wolverhampton.

Due to open late Spring 2023 following a significant building fabric refurbishment by the local authority and

ASM’s final fit out The Halls shall consist of the Civic a 3,400-capacity room and the Wulfrun at 1,200 capacity.

With a strong concert history and the addition of a new in-house catering solution we expect the re-launched venues to be holding more than 250 event nights pa.

We operate at venues of all sizes and have exclusivity at prominent sporting, entertainment and cultural locations across the UK and is also the European Catering Division for ASM Global, the global leader in the delivery of live entertainment and events.

POSITION PURPOSE

Supporting the Executive chef and ensuring the facility operates efficiently and in line with budgets and the highest standards of customer service achieved. As Head Chef, you will be responsible for the running of the kitchen operation, controlling and directing the food process. To support in delivering special events, assist in training of culinary teams, monitoring and maintenance of culinary standards, also ensuring all CGC procedures and systems are being adhered to in all kitchens.

KEY RESPONSIBILITIES

  • Direct the preparation and cooking of food ensuring that the company’s reputation for quality is enhanced with customers and clients at all times.
  • Having a hands on approach with food production.
  • Possess an exceptional drive for quality food.
  • Ensuring all food safety is adhered to in every kitchen.
  • Maintaining food monitoring procedures to facilitate budgetary control and to monitor all costs involved in the kitchen against agreed budgets.
  • Assist in managing and motivating the kitchen team, assigning jobs to ensure the smooth operation of all kitchens.
  • Develop and retain chefs and kitchen personnel.
  • Assist in designing and introducing new Hospitality and Concession food menus.
  • Ensuring that the food quality is consistently high and all hygiene standards are exceeded.
  • To assist in maintaining and completing relevant paperwork regarding production, wastage and cleaning records.
  • Any other reasonable duties as instructed by Executive Chef and management to meet the needs of the business.

PERSON SPECIFICATION

  • Professional Cookery Level 3 qualification or equivalent.
  • Passion for great food and excellent service delivery.
  • Ability to demonstrate outstanding culinary skills.
  • Ability to motivate and develop all levels of chefs.
  • Experience in training culinary skills.
  • Excellent verbal and written communication skills at all levels.
  • Financially astute with regards to food costings and margin management.
  • Ability to work on own initiative but within a framework.
  • Keen interest in current/ new culinary trends.
  • Working knowledge of Microsoft applications including; Word, Excel and PowerPoint.
  • The ability to constantly perform well in high-pressure and fast paced environment.
  • Excellent organisation skills to ensure the smooth running of kitchens.
  • In depth knowledge of all the sections in a kitchen to efficiently manage operations.

GENERAL INFORMATION

The requirements of the business are such that a high degree of flexibility is necessary and therefore some evening and weekend work will be required. Additionally, there will be occasions where you will be required to work at other venues in the UK operated by CGC.
