Head Chef – Maldron Hotel Newcastle We have an exciting opportunity for an experienced Head Chef in the Maldron Hotel Newcastle. Located on Newgate Street, Maldron Newcastle is in the heart of the city, providing a central location for guests who are looking for stylish and comfortable accommodation with Newcastle City at their doorstep. The hotel has 265 rooms including double, twin, triple and family rooms, as well as executive rooms and fitness suite. Guests and visitors to Maldron Newcastle can expect great food from the Grain and Grill Restaurant as well as Dalata Hotel Group’s own coffee brand, Red Bean Roastery, a signature blend of coffee prepared by expert baristas. The Grain & Grill Restaurant serves a refreshing menu of healthy and hearty meals designed to cater for all palettes using local suppliers to bring guests a taste of the Toon. Guests can also sit back and relax in the outdoor courtyard area for alfresco drinking and dining. With friendly, helpful staff, good food and excellent facilities, the hotel is the perfect place to enjoy good times with family and friends. Objective of the Role Our Head Chef plays a vital role as a Head of Department for the hotel. They will understand the importance of managing a profitable kitchen, pushing for a high GP and be an inspirational leader who can engage and retain a happy, productive team ensuring a work/life balance is maintained. Plus, access to career opportunities across our hotels. #DevelopWithDalata Key Duties and Responsibilities Lead the kitchen operations for the hotel. Create and develop menus, focusing on quality, taking into account guest preferences. Lead and develop our skilled team including completion of regular reviews and annual appraisals. Manage the purchasing & delivery of food. Manage the kitchen budget and control food costs to achieve gross profit targets. Manage and comply with Health and Food Safety procedures. Play an important role in the success of our conference and events offering. Requirements: Previous experience as a Head Chef/Sous Chef. Proven track record as a Head Chef/Sous Chef in culinary skills, kitchen management, people leadership and development of the Kitchen team. A personal desire to be developed and to learn in your role. Strong communicator; and comfortable in contributing to the overall hotel strategy. Ability to build relationships and influence with all levels of the business.
