Job description
Provide food safety guidance and training resources within the ISO 22000 food safety management system to crew members and managers in the MSC Cruises fleet.
- Fluent oral and written English, other languages, especially Italian, is beneficial.
- Food science or similar education, 3 years of experience in major catering operations may replace formal education.
- Level 3 HACCP and Level 3 Food Hygiene in catering and experience with ISO or FSSC 22000
- Knowledge of EU ShipSan, US Vessel Sanitation and Brazil ANVISA food safety requirements.
- Promote a positive culture of food safety and continuous improvement during interaction with the fleet and shoreside offices.
- Develop, update, implement, and maintain food safety policies, procedures, internal inspection guidelines, and training materials to meet the requirements of ISO 22000 and the health authorities where fleet vessels operate.
- Work with the ISO 22000 Manager and Internal Auditor to apply lessons learned to update onboard policies and procedures.
- Manage a team of travelling supervisors to inspect, audit, and train vessel management.
- Interact directly with onboard managers involved in food safety, especially F&B Directors and Public Health Officers.
- Assist vessels with root cause analysis and corrective actions for any nonconformities identified during internal and external audits and inspections and apply lessons learned to the fleet.
- Establish and maintain a training matrix for food safety internal and external training for all positions onboard that have food safety responsibilities
- Work with other shoreside departments that have impact on onboard food safety operations.
- Work with the technical public health team regarding external health inspections and corrective action statements.
