An exciting opportunity has arisen for an experienced Head Bartender to join General Manager Sam AitAftis and our Front of House team at Franco’s on Jermyn Street, Green Park.
Franco's Italian Restaurant, an exquisite dining destination in St. James, is seeking a skilled and passionate Head Bartender to lead our bar team. As the Head Bartender, you will be responsible for curating a diverse and exceptional beverage menu, overseeing bar operations, and ensuring an elevated bar experience for our esteemed guests. Your creativity in mixology, leadership abilities, and commitment to delivering outstanding guest service will be instrumental in maintaining Franco's reputation as a premier dining establishment.
Responsibilities:
- Bar Operations Management: Oversee the day-to-day operations of the bar, ensuring smooth service, maintaining cleanliness, and upholding quality standards.
- Beverage Menu Curation: Develop and update an innovative and appealing cocktail menu, featuring a balance of classic and signature drinks that complement the restaurant's cuisine.
- Mixology Expertise: Demonstrate expert knowledge in mixology, creating unique and memorable cocktails that showcase your creativity and use of high-quality ingredients.
- Staff Training and Development: Train, mentor, and guide the bar team to enhance their mixology skills, beverage knowledge, and customer service abilities.
- Guest Engagement: Engage with guests, offering personalised recommendations, and ensuring their beverage preferences are met with a warm and professional demeanour.
- Inventory Management: Monitor and manage bar inventory, including ordering and restocking supplies to maintain a well-stocked and efficient bar.
- Quality Control: Ensure all beverages are prepared and presented according to established standards, consistently delivering a delightful experience to guests.
- Compliance and Safety: Adhere to all licencing regulations, health, and safety standards, maintaining a safe environment for both guests and staff.
- Bar Events and Promotions: Plan and organise bar events, tastings, and promotions to attract guests and enhance the bar's reputation.
- Supplier Relationships: Build and maintain positive relationships with suppliers to source high-quality beverages and negotiate favourable pricing.
- Collaboration: Collaborate with the kitchen team and management to create seamless beverage and food pairings, enhancing the overall dining experience.
- Revenue Generation: Implement strategies to promote beverage sales and upselling, contributing to revenue growth while maintaining excellent guest satisfaction.
Requirements:
- Proven experience as a Head Bartender or similar role in a high-end restaurant or upscale bar setting.
- Extensive knowledge of mixology, craft cocktails, wine, and spirits, along with a passion for staying updated with industry trends.
- Excellent leadership skills, with the ability to motivate and guide a team to achieve exceptional results.
- Strong guest service and communication abilities, with a friendly and professional demeanour.
- Ability to handle high-pressure situations, multitask, and maintain composure during busy periods.
- Impeccable grooming and presentation standards.
- Certification in mixology or relevant beverage-related courses is a plus.

Who are we?
Franco’s first opened in 1946, is considered one of the first Italian restaurants in London which focuses on traditional and contemporary Italian Cuisine. Located on Jermyn Street between Green Park and Piccadilly, Franco’s is a family-owned restaurant that has a sister venue, Wiltons also on Jermyn Street. Both are managed by Director Jason Phillips who has worked at the Savoy, the Avenue and C London.
The restaurant compromises of a bar area, main dining room and a basement area which can be used as two Private Dining rooms or additional seating for the restaurant.
