We are looking for a motivated & ambitous bar manager/Junior manager to join our team & brand at The Bootlegger.
The right applicants should be hardworking, creative, and charismatic industry professionals with the style and panache to lead the team. We are looking for a manager, responsible for the smooth day-to-day running of this 7-day operation, with full accountability for the performance of the site. You will be expected to bring fresh, new, and exciting ideas to this already highly regarded and growing brand.
- The recruitment process includes a two-stage interview.
- The role is offered on full-time contract and is available from March 2023.

ROLE AND RESPONSIBILITIES
- Overall profit and loss accountability for the site, ensuring sales, gross margin, and net profit targets are exceeded
- Interact with customers to develop loyalty and handle customer concerns.
- Ensure all licenses are current including health, safety, and liquor.
- Create employee schedules based on expected customer numbers.
- Leadership of the team of Bootleggers to create the right environment for customers.
- Work with liquor vendors to develop new productions or promotions for the bar.
- Set and maintain standards for cleanliness and safety.
- Collaborate with the Operations Director to negotiate with vendors, order supplies, manage inventories and budgets.
REQUIRED SKILLS AND QUALIFICATIONS
- Great interpersonal, communication, and customer-service skills.
- Ability to hire, train, manage and schedule staff.
- Extensive knowledge of liquor, bartending, and service protocols.
- Solid organizational skills and knowledge of budgets, inventories, and negotiating prices with vendors.
- Great sales skills and talent for developing promotions or new products.
- A minimum of 2 years of management experience is required in a bar or similar environment.
- Must be 21 years of age.
- Ambitious with a very strong work ethic
OUR STORY
29,307 days after prohibition ended, restoring sanity, and permitting the consumption of alcohol again, The Bootlegger family opened the doors to our first bar on Gloucester Road in Bristol. Since then, we have continued to celebrate this momentous occasion, and have continued our journey west to Womanby Street in Cardiff and south to Fore Street in Exeter.

When it comes to cocktails, The Bootlegger has over 80 for you to enjoy, from good ol’ classics to swanky new creations. We are one of only a few bars around the UK to sell CBD infused cocktails that are all the buzz right now. For our gin connoisseurs, we have in-house dedicated gin bars offering a unique collection of over 100 gins. The Bootlegger also stocks an equally delicious range of craft beers, ales, and ciders, including local favourites. All of these will go down smoothly, especially when supported by our exciting live music schedule from local chaps and chapettes, as well as DJs spinning more contemporary tunes.
