Job Description
Hands-on Bakery Manager to manage smooth and efficient running of bread operation of this high-end artisanal wholesale bakery. Delivering the production plan efficiently to the highest quality, whilst maintaining Good Manufacturing Practice and Health & Safety standards at all times.
Key Responsibilities
- Run an efficient artisanal bakery operation
- Ensure product quality is consistent, timely and compliant to the product specification standards, ensuring the highest standards at all times
- Deliver high standards of Food Safety and Health & Safety as set by the Company
- Lead by example; encouraging a high level of team morale, ensuring all staff learn and grow from your professionalism and behaviour.
Duties
- Directly manage all aspects of production, reviewing production needs on a daily basis and planning accordingly.
- Ensure recipes are followed, ensuring optimum product quality standards.
- Make recommendations for recipe and product improvements.
- Responsible for the operational implementation of new products including updating inventory and staff training.
- Organisation of shift and rota on an on-going basis, to ensure maximum efficiency and productivity.
- Build and continuously shape the operational structure with General Manager.
- Recommend and manage operational and organisational changes.
- Resolve anticipated problems or concerns; eg. shortages, quality issues, delays, operational issues, etc. with other departments
- Proactively communicate any equipment failures with the appropriate people and ensure issues are resolved.
- Review key performance indicators on a regular basis.
Food Safety, H&S, SALSA
- Address Food Safety, H&S, SALSA concerns in a timely manner and proactively address issues.
- Ensure highest levels of cleanliness, including clean as you go and deep cleaning
- Management of food safety systems, maintaining and improving standards
Management
- Management of all bakers and packers.
- Development of bakers to improve their own ability within artisan baking
- Management of team through the supervisors, including: rotas, managing absences, including holidays, performance feedback, probation reviews and job chats.
- Identify vacancies and recruit bakers as required.
- Manage productivity levels in line with budgeted expectations, including overtime
- Attend meetings as required
Personal Specification
- Master baker with experience in artisanal breads
