Kinsbrook is a fast-paced, multi-faceted site, with a vineyard, winery, restaurant and farm shop. The farm shop has a complete butchery counter located in a busy retail sector. Hours: 30 per week. 3-4 days per week, at least one weekend day. You will always have two days off consecutively.
As this is an apprenticeship role, you will come to college for training. Please consider how you will commute to and from Plumpton College once a week.
This is a rural area, with no transport links so own transport is advised.

What will the apprentice be doing?
- You will learn how to do full nose to tail butchery on pork/lamb/beef/venison and other game in season
- You will learn how to sell and how to interact with customers and build relationships with them.
- You will learn how different meats should be best cooked in order to make recommendations to buying customers.
- You will learn how to cure and smoke meat and how to make sausages and bacon.
- You will learn how to use different knives, mincers, vac packers and all other equipment
- You will learn about counter presentation
- You will learn all relevant routines around hygiene and cleanliness
What training will the apprentice take and what qualification will the apprentice get at the end?
The final certification will be for L2 Butchery.
The apprentice will learn:
- Knife skills - including cutting, boning, trimming and mincing of meat
- Health and safety practices, food safety and hygiene and key legislation
- Using butchery tools and machinery – including mincing, sausage making, bacon curing, vacuum packing
- Business profitability, maximising productivity, efficiency and customer care
- Team work and customer care skills
- Specialist retail shop or processing plant butchery skills
Qualifications Awarded
- Butchery Level 2 Apprenticeship Certificate
- Level 2 award in food safety
- Level 2 award in health and safety
- Level 2 award in knife skills
- Level 1 in maths and English (if applicable)
